Nothing screams brunch quite like a creamy Egg Salad Recipe. Now pair that creamy salad with a crunchy low carb bread, some lettuce, and a slice of tomato and you have a masterpiece! An easy recipe that makes you feel good and tastes delicious, what more could you want?
2 peeled hard boiled eggs
1 Tbsp Mayonnaise
1/3 tsp yellow mustard
Salt and pepper to taste
1-2 Lettuce slices (optional)
1-2 tomato slices (optional)
Cut your boiled eggs in half and separate the yolks and whites. Chop up the egg whites and mix the egg yolks with the mayonnaise, mustard, salt, and pepper until it’s creamy and smooth.
Spread some mayo on one slice of bread and mustard on another, you can also add lettuce, tomato or any additional ingredients.
Spread the egg white and yolk mixture between the two slices of bread and enjoy!
