Low Carb Biscotti FAQs
Our Biscottini are petite, portioned versions of classic Italian biscotti. They are crisp, gently sweet, and surprisingly high in protein. We make them with clean ingredients and just a touch of organic cane sugar, so they feel like an everyday treat you can enjoy with coffee, espresso, or tea without the heaviness or sugar load of a traditional biscotti.
They are lower in carbs than traditional biscotti because we use a higher fiber, higher protein flour blend and far less sugar. They are not zero carb, but they are noticeably lower in carbs and much higher in protein compared to conventional biscotti.
Yes. Each Biscottini has 2 grams of protein, which is unusually high for a sweet, crunchy snack. A typical traditional biscotti has 0 grams of protein, so Biscottini offer a much more balanced and nourishing option compared to standard cookies or biscotti.
Yes. We only use organic cane sugar in very small amounts (just 2 grams) and we do not use any other sweeteners. Many “low carb” biscotti on the market rely on alternative or artificial sweeteners to replace sugar, but we do not use those. The result is a lightly sweet, clean tasting biscotti with far better macros than traditional versions.
No. We do not use preservatives, dough conditioners, artificial flavors, or dyes.

They are very close to traditional Italian biscotti, but with a small twist to make them easier and more enjoyable to eat. Classic biscotti are often extremely hard because they contain no butter at all, while ours use just a little bit of butter. This keeps the crisp, authentic biscotti texture but prevents them from becoming rock hard or difficult to bite into.

Yes. All of our Biscottini contain eggs and butter.
They contain wheat and are not gluten free, and anyone with a wheat allergy or celiac disease should avoid them. However, the wheat flours we use are minimally processed, European style flours, which many people who are gluten sensitive or gluten intolerant (but not celiac) can typically enjoy..

Toasted Almond is the top choice for coffee or tea dips. Citrus based flavors pair especially well with black teas and herbal teas.
They stay crisp for up to 3 months when kept in an airtight container or in the original packaging, stored at room temperature and out of direct sunlight.
Yes. They are sturdy and hold their crispness very well during shipping. We also add recyclable padding around them to help minimize breakage, although small cracks can happen from time to time. If your order ever arrives with more breakage than expected, please reach out to us.

Low Carb Multigrain Bread FAQs
Wilbur is our signature multigrain sandwich bread made with a blend of five flours that are naturally high in fiber and protein. It has a hearty, nutty flavor, a soft but structured crumb that makes it perfect for everyday sandwiches and toast.
All of our sandwich breads have names, and “Wilbur” was chosen because it captures the hearty, earthy, wholesome personality of this bread. Each bread in our lineup has its own character, and Wilbur felt like the perfect fit for our natural and nourishing multigrain loaf.

We offer a wide range of low carb products, so having this dedicated Dr. B’s stamp helps distinguish which items fall into that specific nutritional category. Yes. Wilbur is naturally very low in carbs, with just 1 gram of net carbs per slice, because we use flours that are naturally higher fiber & protein instead of modified wheat starch or chemically altered fibers. Most “low carb” breads you see on the market list total carbs somewhere in the 20 grams/slice range and then subtract a very large amount of fiber (ex. 18 grams) to get the net carbs down. That is because they rely on resistant or chemically modified starches. Ours is completely natural, which is why the total carbs are only 5 grams and the fiber is 4 grams. The result is a multigrain bread that feels hearty but is still macro friendly and great for balanced meals.
Yes. Each slice contains 7 grams of protein, actually every slice of Wilbur contains more protein and less calories than eating a boiled egg! The protein comes from the natural grain blend rather than additives, so it tastes like real bread but makes you feel great and keeps you satisfied for longer.

We bake on Mondays, Wednesdays, and Fridays. Orders are shipped out the same day they are baked, and if you are located within the continental US, you should receive them within 2 to 3 business days.

Frankie is our signature New York style Low Carb Sourdough bread. It has a crisp, golden crust, a soft, chewy, airy interior, and the perfect balanced tang. Frankie is baked using traditional sourdough techniques, but with a flour blend that is naturally higher in protein and fiber, making it a clean, low carb option that still tastes like real, authentic sourdough.
All of our breads have people names, and Frankie felt like the perfect match for a bold, confident, New York style sourdough. It has personality. It has an attitude. And like the name this bread is a classic.

Yes. Frankie is made exactly the way traditional sourdough should be. We start with a live sourdough starter, let the dough ferment slowly, and give it a long, natural rise so the flavor and texture develop on their own. There’s no commercial yeast added and no shortcuts; the lift, the tang, and the open crumb all come straight from genuine, old-fashioned sourdough fermentation.
Sourdough is typically gentler on digestion because the fermentation process breaks down some of the starches and gluten structures. While Frankie it is not gluten free, customers with mild gluten sensitivity (not celiac) often report that they can tolerate sourdough more comfortably than regular sandwich bread.
It’s called the New York Style because the sourness is balanced and moderate. You get a clear, pleasant tang in every bite, but not the sharp, aggressive sour flavor that San Francisco style
sourdough is known for. This makes Frankie much more versatile; the tang enhances your toast or sandwich instead of overpowering it.
Frankie is made with minimally processed, European-style wheat flours that we source very carefully, including high-quality local flour mills and flours from Australia. These flours are clean, simple, and closer to the way wheat is milled in traditional European baking.
